GF/DF Belgian Waffles

A relatively simple Belgian waffle recipe that is Dairy and Gluten free and makes 4 waffles. Most of the other GF waffles I've tried are too dense or lack structure and flavour. This yeasted variety is closer to an authentic Belgian and comes out light and crispy but holds up well with caramelized apples or a berry compote topped with coconut whipped cream.
Ingredients
2 1/2 Cups Almond milk
1 1/2 tsp Quick/Instant yeast
2 eggs
4 Tbsp. Vegetable oil
1 Tsp Vanilla
1 Tbsp. Agave
1/4 Tsp Salt
2 Cups MGF Flour blend
1/4 Tsp Xanthan gum
Directions
Warm Almond milk in microwave to about 110F (about a minute)
Combine yeast and warmed almond milk and let sit for 5 minutes until foamy
Whisk Eggs, Oil, Vanilla, Agave in separate bowl then add milk/yeast mixture
Combine flour, salt, xanthan gum in large bowl
Add liquid to flour mixture, and let rise for at least 30 minutes
Pre-heat waffle maker
Add batter according to waffle maker directions, cook until waffle maker opens easily
Keep warm on a wire rack in warm oven or warming drawer
