Apple Port Pork Tenderloin

Going with a decent 10 year old tawny port, some granny smith apples and a touch of ginger this tenderloin comes out moist with a great glaze and a sweet tangy sauce to drizzle on top.


As a simple dish with only a few ingredients it comes out with a sweet, tangy and slightly complex flavour that is sure to please any appetite. Serve with Honey Mustard glazed carrots, a wild rice pilaf, and a nice Pinot Noir.


Ingredients

  1. Pork Tenderloin

  2. Salt

  3. Pepper

  4. 1T Vegetable Oil

  5. Port

  6. Apple Cider Vinegar

  7. 3 cloves garlic smashed

  8. 1" ginger smashed

  9. 2 tsp Agave

  10. 2 Apples (Granny Smith) sliced

Directions

  • Remove silver skin from pork tenderloin

  • Season pork with Salt and Pepper and let rest for 20 minutes

  • Heat oil in pan until shimmering

  • Brown pork on all sides and remove to oven roaster

  • Add apples to roaster

  • Deglaze pan with Port

  • Add Apple cider vinegar, garlic, ginger, agave

  • Simmer until reduced by half

  • Pour sauce over pork

  • Roast in oven until 160f (30 minutes)

  • Remove and rest for 10
