Apple Port Pork Tenderloin

Going with a decent 10 year old tawny port, some granny smith apples and a touch of ginger this tenderloin comes out moist with a great glaze and a sweet tangy sauce to drizzle on top.
As a simple dish with only a few ingredients it comes out with a sweet, tangy and slightly complex flavour that is sure to please any appetite. Serve with Honey Mustard glazed carrots, a wild rice pilaf, and a nice Pinot Noir.
Ingredients
Pork Tenderloin
Salt
Pepper
1T Vegetable Oil
Port
Apple Cider Vinegar
3 cloves garlic smashed
1" ginger smashed
2 tsp Agave
2 Apples (Granny Smith) sliced
Directions
Remove silver skin from pork tenderloin
Season pork with Salt and Pepper and let rest for 20 minutes
Heat oil in pan until shimmering
Brown pork on all sides and remove to oven roaster
Add apples to roaster
Deglaze pan with Port
Add Apple cider vinegar, garlic, ginger, agave
Simmer until reduced by half
Pour sauce over pork
Roast in oven until 160f (30 minutes)
Remove and rest for 10
