GF Nutty Chicken Teriyaki Stir Fry

Trying to come up with a simple end of day stir fry that carried good flavour throughout and kept texture on the chicken and veg came up with a simple technique of pre-loading the chicken with a starch/sauce blend to caramelize before going into the final stir-fry.
Meant as that end-of-day-rush meal, it's meant to use what you have in the pantry and crisper. Find those peppers and oninons, snap peas and brocolli, throw in a handful of carrots and cashews and maybe a few mushrooms, . Finish with some scallions, sesame seeds, and serve over a simple rice and you won't have any leftovers.
Looking for a bit of heat, throw in a thai chili seeded and diced or tame it down with a serrano. Lots of options here.
Ingredients
1 Tbsp. Corn Starch
1 Tbsp. Sesame Oil
1 Tbsp. Tahini
1 Tbsp. GF Soy Sauce / Tamari sauce
2 Chicken breast (boneless/skinless), cubed/sliced/whatever
1 Tbsp. Vegetable Oil
Mixed Veggies
1 small Onion
2 Carrots
1 Bell pepper
Handful Broccoli florets and stems
A few Mushrooms
Handful Snap peas / Snow peas
GF Cashews (optional 'cuz they can be nutty expensive)
1/2 Cup MGF Teriyaki sauce (or more, it's pretty good) - Recipe coming soon!
Salt & Pepper to taste (usually not much salt b/c of the Soy.
Directions
Combine corn starch, sesame oil, tahini, and soy sauce in a medium bowl
Cut up your chicken into decent 1" sized bites and add to bowl, mix, and rest for 10 minutes
Chop up your Veggies.
Pepper and onion about the size of your thumb
Carrots and broccoli stems about a pinky
Broccoli florets and mushrooms quarter sized
Heat vegetable oil in wok/large saute pan until shimmering
Add chicken to oil (it may splatter) and cook until well browned, 10 minutes. Remove chicken to a plate once cooked
Add Onion, carrots, and broccoli stems; cook for 5 minutes
Add bell pepper and snap peas; cook for 2 minutes
Add broccoli florets, mushrooms, and cashews; cook for 2 minutes
Add back the chicken
Add teriyaki sauce, lower heat and simmer for 5 minutes
Serve over rice.
